Fall Things

There are many fall things I enjoy doing.

Making vegetable soup is one.  There is something cozy about gathering the ingredients and spending a bit of time in the kitchen.

Left over roast beef makes a great foundation with its rich broth for this hearty dish.  Sliced carrots and celery - shredded cabbage - diced onion -  green beans and corn with several cups of tomato juice is all that is needed.   If one likes - a potato or two can be added.   Then everything goes into the slow cooker which is set on low.   Some salt and pepper to taste - a bit of sugar, oregano and basil will give it a good flavor.  The last ingredient is a bay leaf on top.  (Important to remove the leaf before serving).  It is best to let the soup cook for several hours or overnight.  
Not only does this dish taste delicious.   It will warm the heart and feed the soul.

  2. Hi Debbie, my appetite hasn't been very good lately, but I am willing to bet that I would so love your soup!!! I love to make chicken soup (and other soups), hot chocolate and taking my walks and enjoying the cooler temperatures and changing colours. Great post!

  8. Uhmmm, smells delicious, will try this one. I'm a big fan of vegetable soups too , and autumn is a very good season to pick up the habit of making soup again. Hugs.

  9. I can imagine the aroma. Usually when I make beef and vegetable soup it rains..........hmmm. My daughter has accused me of making it rain before . Last week I made soup and .........ah ha, it did not rain. But it is raining today. A delay, maybe. :)

  12. Oh yum! I need to remember to throw some cabbage in next time I make a beef soup or stew. My husband loves the stuff! Making chili tonight, we are having a blustery and chilly day!
