Since the days have grown shorter...

the evenings find me doing a bit more baking.
Pumpkin Bars with Cream Cheese Icing is a wonderful fall dessert.  If you enjoy the taste of pumpkin these are just fabulous.   Very moist and flavorful.

If you would like the recipe you can find it here.
I used almonds on top instead of pecans.  They were just what I had on hand.

Another comforting dish is the classic green beans with ham.   I like to put them in the crock pot over night and let them simmer on low.   Makes a great lunch the next day with some sliced tomatoes on the side.

Such an easy meal!   Means too the cook gets a break and can go play in the studio for a bit.

This is what I am doing since the days have grown shorter.  What about you?

To all my blogging buddies whose days have grown longer (other side of the world) would love to hear what you are doing too!

Take care and God Bless.

  1. Bless you, Debbie, for the wonderful photos.
I smile to see your crock pot. I had a similar style when I lived in Ohio. Those days were fun times trying out recipes like brown bread in a coffee can. Time to buy another. Baking is the perfect thing to do this time of year.

  4. I've had those pumpkin bars and they freeze wonderfully. I try not to bake anymore as I can't resist sweets and have just one. It was dark by 7:45 last night. Oh those long winter nights. I'm trying to put on a good face, since I dread winter, but it's coming no matter what. I usually make soup when it gets cold, though we haven't had that happen yet.

  5. I'm trying to cling on to daylight as long as I can. Here in France we are, or were until last evening enjoying some nice evening BBq.s. Terrific thunder storm put stop to that. Not into winter style meals yet, but love the sound of your beans & ham hotpot. Please show us more of your lovely paintings.

  8. Debbie, you have been busy, and I love what you have been doing! the cooking, baking and your painting is absolutely gorgeous! I love the Autumn! I love the root vegetables and the great prices they are at this time of year. I love the changing leaves, the brisk winds, the smell of the air...I love to come in after being outside and sip a nice hot chocolate.

I look forward to seeing more of your posts and art, as I just love your blog. God bless you. Hugs.

  9. I love anything pumpkin, it is funny because I find myself baking in the evenings too. I couldn't do it in the summer, we would sit outside when the days were longer. Beautiful landscape, the blues are gorgeous!

  10. This looks real yummy, Debbie. I bake something similar to this but the addition of those almonds must make it real special. I like to bake in the evenings too, an old habit from my working days .Love your waterpainting with cool colors. Take care, xx

  11. Oh MY! makes me hungry and cosy all at the same time.
We have soup all summer long. I have never tried green beans and ham. usually split pea. Is it the same concept? The ham provided the base flavour?
I am not looking forward to the dark nights. My life changes when that happens. I do not see well in the dark. Driving is limited to only where I know very well.
hanging on to enjoying this as long as I can.

  13. Hello dear Debbie
Oh I love the sound of both these recipes and I will try the crockpot one over the weekend!
Painful as it is I'm trying to be good for the next few months and cut down on sugar!

Our longer days are lovely however the weather has not been the best with cooler days and rain showers..... However I spent time at the garden centre today buying a few plants, one being sweet peas!!!
Wishing you a happy weekend - have fun.
    Hugs

  14. Sorry Debbie - I meant to say I love your new painting. Fences and barns are favourites of mine for photography.
Barns are hard to find in the city though, but when I'm in France they're everywhere!

  15. We are heading into our longer days Debbie and so looking forward to some sunshine. Your cooking makes me think I should spare some of my painting time and get some cooking done but then again..... maybe not!

  16. The pumpkin bars look delicious but also very fattening - and seeing as I am trying to lose weight after my holiday indulgences I guess I will just have to make do with looking at your picture with a sigh. I am frantically working in the garden just now - so much needing doing and so little time to get it all done. Where do the days go.

  25. Your painting looks lovely and autumnal Debbie! How nice to do more baking as the days get cosier to be indoors - the pumpkin bar looks wonderful! I am spending a lot more time in the garden and am enjoying photographing and painting my flowers. I've got walking along the beach more often too and may even be brave enough to go for a swim soon!

  27. Hi Debbie,
Couldn't think of any other way to get hold of you. I think someone may have hacked into your gmail. I had a short and strange note from that address this morning. Hope it's all right.
